These soft and chewy cookies are loaded with delicious flavor! With the perfect blend of the iconic chocolate, coconut, and almond trio reminiscent of an Almond Joy candy bar, these cookies are a delightful treat with an amazing texture. Although not made with actual Almond Joy candy bars, these cookies combine all the flavors of the classic candy bar rolled up in an amazing cookie.

Makes about 3 dozen cookies
Ingredients
Almond Joy Cookies
2¼ cups all-purpose flour
1 tsp cornstarch
1 tsp baking soda
½ tsp salt
¾ cup unsalted butter, softened
¾ cup light brown sugar, packed
¾ cup granulated sugar
2 large eggs
1½ tsp pure vanilla extract
1 cup semisweet chocolate chips
1 cup sweetened shredded coconut
1 cup slivered almonds
Directions
Almond Joy Cookies
Preheat oven to 375°F. Spray two large baking sheets with nonstick cooking spray or line with a baking mat or parchment paper.
In a small bowl, whisk together the flour, cornstarch, baking soda, and salt until combined; set aside.
In a large bowl using an electric mixer, cream together the butter and sugars. Beat in the eggs, one at a time, beating well after each addition. Then stir in the vanilla until just incorporated.
Slowly stir the dry ingredients into the wet ingredients until incorporated. Then use a rubber spatula to gently fold in the chocolate chips, coconut, and almonds. Place the dough in the refrigerator for one hour to chill.
Drop by rounded tablespoonfuls onto the prepared baking sheets.
Bake for 10-12 minutes, or until very lightly browned at the edges. Allow the cookies to cool on baking sheets for 5 minutes before removing to wire racks to cool completely.
