Ingredients
Apple Cheddar Pupcakes
¾ cup plain Greek yogurt
⅓ cup vegetable or canola oil
2 Tbsp honey
2 large eggs
1½ cups all-purpose flour
¼ cup old-fashioned rolled oats
2 tsp baking powder
1 cup apple, shredded
1 cup cheddar cheese, shredded
Honey Frosting
8 oz cream cheese, room temperature
2 Tbsp honey
2 Tbsp plain Greek yogurt
Directions
Apple Cheddar Pupcakes
Preheat oven to 350°F. Line a standard muffin tin with paper or silicone cupcake liners.
In a large bowl, whisk together the yogurt, oil, honey, and eggs.
In a separate medium bowl, whisk together the flour, oats, and baking powder.
Add the dry ingredients to the wet ingredients and mix until evenly moistened. Then gently fold in the shredded apples and cheddar.
Evenly divide the batter among the cavities of the prepared pan, filling the cups about ¾ full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cakes from the muffin tin and cool completely on a wire rack before frosting.
Honey Frosting
Using an electric handheld mixer, beat together the cream cheese, honey, and yogurt until light and creamy.
Pipe or spread the frosting on top of the cooled pupcakes and decorate as desired. Then let your pup enjoy!
