This savory, vibrant tart features a flaky, buttery pastry topped with a creamy, light, citrus mascarpone and loaded with fresh asparagus. Great as an appetizer, snack, or the ultimate side dish, this impressive and visually pleasing tart is the perfect way to celebrate spring, or really any special occasion or holiday.
Ingredients
Lemon Asparagus Tart
1 Tbsp olive oil
1 tsp kosher salt, divided
½ tsp black pepper
1 sheet puff pastry, thawed
1 cup mascarpone cheese
¼ cup finely grated Parmesan cheese
1 large egg, beaten
1 Tbsp fresh lemon zest
1 tsp fresh lemon juice
1 Tbsp all-purpose flour
2 Tbsp fresh chives, chopped
½ pound thin asparagus, bottoms trimmed and cut into 2-inch pieces
Directions
Lemon Asparagus Tart
Preheat oven to 400°F. Line a baking sheet with parchment paper.
In a medium bowl, toss the asparagus with the olive oil, ¼ teaspoon of the salt, and the black pepper. Set aside.
On a lightly floured surface, roll out the puff pastry to a 9x12-inch rectangle. Transfer the pastry to the prepared baking sheet.
In a small bowl, combine the mascarpone, Parmesan, egg, lemon zest, lemon juice, flour, and the remaining ¾ teaspoon of salt. Then gently fold in the chopped chives until evenly distributed.
Spread the mascarpone mixture evenly on top of the pastry, leaving a ½-inch border around the edges. Use a paring knife to make small cuts all the way around the border of the pastry.
Lay the asparagus in four neat columns along the length of the pastry. (Laying the asparagus in neat columns will make cutting the tart easier.)
Bake the tart for about 20-25 minutes, or until the edges are puffed and golden brown and the center is lightly golden brown. Allow the tart to cool slightly before cutting and serving.
