Mangoes not only have a sweet, juicy taste, but they’re full of vitamins and antioxidants that promote good health for both humans and our pets. Our dogs deserve the best, so start your favorite furball’s morning right with this canine-friendly tasty treat. These bark-worthy mango oatmeal ruffin’ muffins are quick and easy to make with a tail-wagging good taste and easy-to-chew soft texture. They’re perfect on their own or add a honey yogurt glaze for a decadent breakfast.
Makes 8 muffins
Ingredients
Mango Oatmeal Ruffin’ Muffins
½ cup whole wheat flour
¼ cup coconut flour
1½ tsp baking powder
¾ cup old-fashioned oats
3 Tbsp coconut oil
½ cup plain Greek yogurt
3 Tbsp water
2 large eggs
2 Tbsp honey
½ cup diced fresh mango
Honey Yogurt Glaze
½ cup yogurt
2 Tbsp honey
Directions
Mango Oatmeal Ruffin’ Muffins
Preheat oven to 350°F. Line a standard muffin tin with paper or silicone cupcake liners.
In a small bowl, whisk together the flours, baking powder, and oats.
In a large bowl, use a handheld electric mixer to beat together the oil, yogurt, water, egg, and honey until combined.
Add the dry ingredients to the wet ingredients and beat with the handheld electric mixer until well mixed and incorporated.
Using a rubber spatula, gently fold in the diced mango.
Evenly divide the batter among the cavities of the prepared pan, filling the cups about ¾ full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cakes from the muffin tin and cool completely on a wire rack before icing.
Honey Yogurt Glaze
In a small bowl, whisk the yogurt and honey together until combined and smooth.
Drizzle onto the cooled muffins. Then let your pup devour them!
I cannot find where and how the dry ingredients are mixed in with the wet. I would really like to try these for my fur baby.
