Indulgent Chocolate Caramel Peanut Butter Chex Mix

Ingredients

Chocolate Caramel Peanut Butter Chex Mix Bars

  • 8 cups Chocolate Chex cereal

  • ¾ cup packed light brown sugar

  • 6 Tbsp salted butter

  • 3 Tbsp light corn syrup

  • ¼ tsp baking soda

  • 1 cup Reese's mini peanut butter cups (or regular-sized Reese’s cut up into bite-sized pieces)

  • 1 cup miniature marshmallows

  • 12 soft caramels, chopped

  • 1 Tbsp heavy cream

  • ½ cup milk chocolate chips

  • ½ cup white chocolate chips

  • Optional additions/substitutions: peanut butter chips, roasted peanuts


Directions

Chocolate Caramel Peanut Butter Chex Mix Bars

  1. Line a large baking sheet with waxed paper or foil and set aside.

  2. Place the cereal into a large microwave-safe bowl and set aside.

  3. Place the brown sugar, butter, and corn syrup in a separate microwave-safe bowl, and heat on high for 1-2 minutes, stirring after 1 minute, until the mixture is melted and smooth. Stir in the baking soda until dissolved.

  4. Pour the sugar-butter mixture over the cereal, and gently stir until the cereal is evenly coated, being careful not to crush the cereal. Place the bowl with the cereal into the microwave and heat on high for 3 minutes, stirring well every minute. Spread the cereal mixture onto the prepared baking sheet, and allow to cool for about 10 minutes.

  5. Once cooled, break the cereal up into bite-sized pieces and evenly spread onto the same baking sheet. Then evenly sprinkle with the Reese’s and marshmallows.

  6. In a small microwave-safe bowl, heat the caramel pieces and cream uncovered on high for about 1 minute or until the caramel can be stirred smooth. Use a spoon or fork to drizzle the caramel over the snack mix.

  7. In a small microwave-safe bowl, heat the milk chocolate chips on medium heat for about 1 minute. Remove from the microwave and stir. Repeat heating at shorter intervals (15-20 seconds), stirring in-between each interval, until the chocolate is melted and smooth. Drizzle over the snack mixture. Repeat this process with the white chocolate chips (except with no cream), and drizzle over the snack mixture.

  8. Refrigerate the snack mixture on the cookie sheet until set. When ready to serve, break apart into bite-sized pieces or cut into bars.
