A Nilla wafer cookie crust is layered with an orange creamsicle cheesecake-like filling and topped with whipped cream for a super easy make-ahead pie that tastes just like the favorite popsicle of your childhood. This cool and dreamy sweet treat is so refreshing on a hot summer day and can be made in just a few minutes without turning on the oven. With orange juice, orange zest, and orange extract, this beautiful pie is full of bright orange flavor. Ingredients
Vanilla Wafer Cookie Crust
2 cups vanilla wafer cookie crumbs
5 Tbsp unsalted butter, melted
Orange Creamsicle Filling
16 oz full-fat cream cheese, softened
2½ cups confectioners’ sugar
½ cup sweetened condensed milk
⅓ cup fresh orange juice
2 tsp orange zest
2 tsp pure orange extract
1 tsp clear vanilla extract
Pinch of salt
Orange food coloring, optional
2 cups extra creamy whipped topping, like Cool Whip, thawed
Topping
2 cups extra creamy whipped topping, like Cool Whip, thawed
1 can mandarin oranges (or fresh orange slices)
Directions
Vanilla Wafer Cookie Crust
Spray a 9-inch pie dish with nonstick cooking spray.
In the bowl of a food processor, add the vanilla wafer cookies and pulse until fine crumbs form. Add the sugar and butter and pulse to combine until the cookie crumbs are evenly moistened.
Dump the crumbs into the prepared pie dish and use a glass or measuring cup to firmly press the crumbs onto the bottom and up the sides. Place in the refrigerator to chill.
Orange Creamsicle Filling
In a large bowl, use an electric handheld mixer to beat the cream cheese until it is light and fluffy.
Add in the confectioners’ sugar, sweetened condensed milk, orange juice, orange zest, orange extract, vanilla extract, and salt and beat until well combined. Add in a few drops of food coloring, if desired, and mix to incorporate.
Use a rubber spatula to gently fold in the whipped topping.
Pour the creamsicle filling into the chilled pie crust. Use an offset spatula to spread the filling into an even layer.
Topping
Spoon the whipped topping on top of the creamsicle layer and use an offset spatula to spread into an even layer.
Refrigerate for at least 3 hours, up to 3 days if covered. (Allowing the pie to refrigerate overnight is best to give the flavors time to meld.) Top with mandarin oranges or fresh orange slices.
